Healthy Sweet and Sour Chicken Recipe

This is a lovely tasting fakeaway and I know it looks quite chunky and I'm aware that some children won't eat things like this but if you take a hand blender to the veggies in this is becomes a lovely smooth tasty sauce.


I would like to share the way I make my foolproof rice as well, I use the evaporation method for it which means that however much dry rice you use, you need twice as much water (for example 50g rice means 100ml water or 100g of rice means 200ml water). You bring the water to the boil and add rice, turn the heat down low and cover. Leave it alone for 10 minutes and then take it off the heat and leave it for a further ten minutes. You don't stir or take the lid off until it is finished and I promise you it will turn out perfect every time.


Healthy Sweet and Sour Chicken


Serves 4 Prep time - 5 mins Cooking time - 20 mins



Ingredients


  • 2tsp Vegetable oil

  • 3 chicken breasts (cut into chunks)

  • 1 large onion diced

  • 2 bell peppers

  • 2 garlic cloves (or lazy squeezy garlic)

  • 25g chunk ginger (or lazy ginger)

Sauce

  • 450g can pineapple rings in juice (chopped into chunks)

  • 2 tbsp cornflower

  • 150ml water

  • 2tbsp white wine vinegar

  • 2tbsp dark soy sauce

  • 2tbsp brown sugar

  • 2tbsp tomato ketchup




Method


  • Prep all your veg (make it as chunky or fine as you and your child will eat)

  • Male the sauce first, drain your juice from pineapple and use two 3tbps to make a slurry in a large bowl with your cornflower.

  • Once that's smooth add in the rest of the juice, your water, the soy sauce, the white wine vinegar, sugar and ketchup and mix until well combined then set aside for later.

  • Add half your oil to a wok or large frying pan and stir fry the onions and peppers over high heat for about 2 minutes.

  • Add the rest of the oil and the chicken and fry until the chicken is coloured on all sides.

  • Add the garlic, ginger and pineapple chunks and cook for another 2 minutes.

  • Now add the sauce you made earlier and bring it to a good simmer.

  • Cook for about 8- 10 minutes until the sauce is nice and glossy.

  • Serve with rice.
