The Most Delicious Scotch Pancake Recipe Ever

i have spent many years trying to make the perfect fluffy delicious sweet scotch pancakes and I have finally got my recipe just the way it should be so I thought I would share it with you as it's far too good to keep to myself. Try it, you won't be disappointed.
Perfect Scotch Pancakes
Makes 16 Prep time - 10 mins Cooking time - 30 mins

Ingredients
350g Self Raising Flour
90g granulated or Caster Sugar
2 medium eggs
300ml whole milk
2 and a half tsp Baking powder
Oil for frying (I use a spray oil for a light coating)
Method
Firstly weigh out your flour, baking powder and sugar and mix together in a large bowl.
Add the eggs and half of the milk and mix
Keep adding milk bit by bit until the batter is nice and smooth, you want it pretty thick but still pourable. Make sure it's nice and smooth.
Then the most important thing is to let it sit for around 5 minutes, you will see little bubbles appearing and that's exactly what you want.
Put a little oil into a non-stick pan and get it up to medium heat.
The first pancake is always a dud so make a small pancake to make sure the pan is the right temp and once you know it is you can get on with cooking them.
Drop a large spoonful of batter per pancake into the pan, for a medium-sized pan, you can usually do three at a time.
If you want a nice thick and perfectly smooth looking pancake then don't spread the batter out with the spoon, the hot pan will do that for you.
You will know the pancakes are ready to flip when you see bubbles appearing on the top and starting to burst. Flip then cook on the other side until golden brown.
Repeat for as many pancakes as you want to make.
Toppings

This is my topping of choice, some butter and a little maple syrup but you can use anything you want.
These pancakes are lovely hot or cold and will keep for about 48 hours in an airtight container.
I have started using the Argo Double Acting Baking powder which I got off of Amazon as it makes the pancakes so much more fluffy than others I have tried. I really rate it and think it makes a massive difference in my baking in general.
